Method

1.Heat oil in small saucepan, add popping corn, cover. Reduce heat, cook corn, covered, over medium heat, until corn starts popping. Reduce heat, cook, covered, over low heat, shaking pan occasionally, until popping stops. Sprinkle popcorn, in single layer, on heatproof tray, sprinkle nuts over popcorn.
2.Stir butter, honey and caster sugar in small saucepan over low heat until sugar dissolves. Bring to the boil. Reduce heat, simmer, uncovered, about 5 minutes or until mixture is caramel in colour.
3.Working quickly, pour the caramel mixture evenly over popcorn, use two lightly oiled metal spoons to turn popcorn to coat evenly with the caramel. When popcorn is cool enough to handle, use hands to separate popcorn pieces.
4.Preheat oven to 240°C. Grease two oven or pizza trays, place in heated oven.
5.Combine cheeses, rind and sifted icing sugar in medium bowl. Place pizza bases on trays, spread with cheese mixture.
6.Bake pizzas for 10 minutes. Top pizzas with strawberries, bake about 5 minutes or until bases are browned and crisp.
7.Top pizzas with caramel popcorn and mint, dust with a little extra sifted pure icing sugar before serving.

This recipe is gluten-free, however, if you decide to use pre-made packaged caramel popcorn, check the label carefully. Lolly Gobble Bliss Bombs (caramel popcorn) is available from supermarkets.
