Ingredients
Ginger treacle spice loaf
- 90 gram butter, chopped
- 1/2 cup (180g) treacle
- 3/4 cup (110g) plain flour
- 1/4 cup (35g) self-raising flour
- 1/2 teaspoon bicarbonate of soda
- 2 teaspoon ground ginger
- 1 teaspoon mixed spice
- 1/2 teaspoon ground cinnamon
- 1/2 cup (110g) caster sugar
- 1/2 cup (125ml) milk
- 1 egg
- 250 gram mascarpone cheese
- 1 tablespoon finely grated lemon rind
- 1 tablespoon lemon juice
- 2 tablespoon pouring cream
Method
Ginger treacle spice loaf
- 1Preheat oven to 180ºC. Grease a 11cm x 20cm loaf pan and line base with baking paper, extending the paper 5cm over long sides.
- 2Cook butter and treacle in a small saucepan over low heat, stirring, until butter melts and mixture is smooth.
- 3Meanwhile, sift flours, soda, spices and sugar into a large bowl. Stir in combined milk and egg, then treacle mixture. Pour mixture into pan.
- 4Bake loaf about 35 minutes. Stand in pan 5 minutes before turning onto a wire rack to cool.
- 5Meanwhile, make lemon mascarpone by combining the remaining ingredients in a small bowl.
- 6Serve warm loaf with lemon mascarpone.
