Ingredients
Ginger and sesame seed logs
- 1 cup (100g) walnuts
- 1 cup (140g) macadamias
- 1 cup (90g) rolled oats
- 400 gram fresh medjool dates, pitted
- 1 1/2 teaspoon ground ginger
- 1/2 teaspoon sea salt
- 1/2 cup (75g) sesame seeds
Method
Ginger and sesame seed logs
- 1Process nuts and oats in a food processor until finely chopped. Add dates, ginger and salt; process until mixture forms a paste.
- 2Shape level tablespoons of mixture into 5cm long logs; place on a baking-paper-lined oven tray. Refrigerate for 15 minutes.
- 3Meanwhile, stir sesame seeds in a frying pan over medium heat for 2 minutes or until lightly toasted. Cool.
- 4Roll logs in sesame seeds; place on a tray. Refrigerate for 2 hours or until firm.
Notes
Medjool dates are available from the fresh food section of major supermarkets. Store logs in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
