Giant macadamia, white chocolate and cranberry cookies
- 185 gram unsalted butter
- 3/4 cup (105g) unsalted macadamias, coarsely chopped
- 150 gram white eating chocolate, coarsely chopped
- 1 cup (220g) firmly packed light brown sugar
- 1/2 cup (110g) caster sugar
- 1 1/2 cup (225g) self-raising flour
- 1/2 cup (75g) plain flour
- 1 egg
- 1 egg yolk
- 3/4 cup (100g) dried cranberries
Method
Giant macadamia, white chocolate and cranberry cookies
- 1Preheat oven to 180°C. Line three oven trays with baking paper.
- 2Melt butter and allow to cool.
- 3In a large frying pan, dry-fry nuts, stirring until browned lightly. Remove from heat.
- 4Sift sugars and flours into a large bowl and add nuts. Lightly beat egg, egg yolk and butter with fork in a small bowl until combined, then stir into flour mixture until mixture forms a soft dough. Stir in chocolate and cranberries.
- 5Roll rounded tablespoons of mixture into balls. Place balls, about 8cm apart, on trays. Flatten to about 8cm wide. Bake about 12 minutes and cool on trays.
