Ingredients
24 medium green prawns
200 millilitre olive oil
100 gram butter, quartered
8 cloves garlic, finely chopped
2 small red chillies, seeded, finely chopped
1 tablespoon chopped parsley
sea salt and pepper, to season
lemon wedges, to serve
baguette, to serve
Method
1. Preheat oven to 220°C.
2. Peel prawns, leaving tails intact. Make a cut down the back of each prawn to de-vein them.
3. Divide oil and butter between 4 small ovenproof pots or ramekins, then divide garlic and chilli between them.
4. Transfer to oven to cook for 10 minutes then remove and place 6 prawns into each pot.
5. Return to oven and cook for a further 6-8 minutes or until prawns are just cooked through.
6. To serve, sprinkle each pot with the parsley, salt and pepper and serve with lemon wedges and fresh baguette.
