Ingredients

Garlic lamb chump chops with roasted capsicum
  • 2 tablespoon olive oil
  • 3 clove garlic, crushed
  • 4 lamb chump chops, trimmed
  • 285 gram jar roasted red capsicum, drained
  • 1/2 cup (140g) tomato purée
  • 1/2 cup (80g) black olives
  • 1 teaspoon brown sugar
  • finely grated rind and juice of 1 lemon
  • 1/4 cup torn mint leaves
  • couscous with flaked toasted almonds, to serve

Method

Garlic lamb chump chops with roasted capsicum

    Heat oil in a large frying pan on high. Sauté garlic, 30 seconds.

    Add chops and pan-fry, 2-3 minutes each side, or until cooked to your liking.

    Stir in capsicum, tomato purée, olives and brown sugar, season to taste. Simmer, 2 minutes.

    Stir in lemon rind, juice and mint leaves. Serve with prepared couscous tossed with almonds, if you like.
