Fruit mince squares
- 155 gram butter, softened
- 2/3 cup (150 grams) caster sugar
- 2 eggs
- 1 cup (150 grams) self-raising flour
- 1/2 cup (75 grams) plain flour
- 1/2 cup (125 millilitres) milk
- 3/4 cup (250 grams) fruit mince
- 1/4 cup (20 grams) flaked almonds
- 2 teaspoon icing sugar
Method
Fruit mince squares
- 1Preheat oven to 180ºC. Grease 24cm x 32cm swiss roll pan; line base and long sides with baking paper, extending paper 5cm over sides.
- 2In a small bowl, beat butter and sugar with an electric mixer until light and fluffy. Beat in eggs, one at a time. Stir in sifted flours and milk. Spread mixture into pan; drop tablespoons of fruit mince over dough. Using the back of a spoon, swirl fruit mince through cake mixture; sprinkle with nuts.
- 3Bake about 20 minutes. Dust with sifted icing sugar before cutting. Serve warm or at room temperature.
Notes
We used fruit mince bought in a jar from the supermarket, but home-made would be even better. Store squares in an airtight container for up to 3 days.
