Fruit mince friands
- 6 egg whites
- 185 gram (6 ounces) unsalted butter, melted
- 1 teaspoon finely grated orange rind
- 1 cup (120g) ground almonds
- 1 1/2 cup (240g) icing (confectioners') sugar
- 1/2 cup (75g) plain (all-purpose) flour
- 1/2 cup (150g) bottled fruit mince
Method
Fruit mince friands
- 1Preheat oven to 180°C (160°C fan-forced). Grease 12-hole (½-cup/125ml) oval friand pan.
- 2Whisk egg whites in medium bowl until frothy. Stir in butter, rind, ground almonds, then sifted icing sugar and flour. Spoon mixture into pan holes.
- 3Bake friands 10 minutes. Remove friands from oven; press a small, 1cm (½-inch) deep hole in top of each friand with the end of a wooden spoon. Spoon fruit mince into holes; bake about 10 minutes.
- 4Stand friands in pan 5 minutes before turning, top-side up, onto wire rack to cool. Serve dusted with sifted icing (confectioners') sugar.
