Fruit butters

These gift-friendly fruit butters make wonderful spreads for toast, muffins or pikelets.

Ingredients

Passionfruit butter
Lime butter
Blood orange butter

Method

1.For the passionfruit butter, combine ingredients in medium heatproof bowl over medium saucepan of simmering water. Stir until mixture thickly coats the back of a wooden spoon. Remove from heat immediately.
2.Stand bowl in sink of cold water, stirring occasionally, for about 10 minutes to stop cooking process. Pour into hot sterilised jars, seal.
3.For lime butter, combine ingredients except rind and colouring in medium heatproof bowl, cook as per passionfruit butter. Stir in rind and colouring before pouring into jars.
4.For blood orange butter, combine ingredients except rind in medium heatproof bowl, cook as per passionfruit butter. Stir in rind before pouring into jars.

Make sure you grate the rind from the citrus fruit before juicing. Keep the butters in the refrigerator. These gift-friendly butters make wonderful spreads for toast, muffins or pikelets.

If you wish to make lemon butter as well, follow the lime butter recipe but replace the lime juice and zest with lemon.
