1.Place eggs, cream or milk, sugar and cinnamon in a shallow bowl. Whisk to combine.
2.Soak brioche in egg mixture for a few seconds each side.
3.Heat the butter in a frying pan on medium. When the butter is foaming, place the soaked brioche slices in the frying pan. Cook brioche, 2 slices at a time, for 2-3 minutes each side until golden.
4.Dust with icing sugar, top with berries and drizzle with maple syrup.
This is also delicious served with crispy bacon, roasted tomatoes and sauteed mushrooms. Just omit the icing sugar and berries.
