Fish kebabs (psari souvlaki)

Let your barbecue send you to Greece with this fish-style souvlaki recipe. Popping with chunks of zucchini and capsicum these kebabs are best served with cooling tzatziki.

Method

1.Cut fish into 3cm pieces. Thread fish and vegetables, alternately, onto skewers.
2.Combine oil and rigani in a small bowl.
3.Cook skewers on heated oiled grill plate (or grill or barbecue), basting with oil mixture, for about 5 minutes or until browned all over and just cooked through. Sprinkle with parsley, if desired.

You will need to soak 12 bamboo skenwers in cold water before use to prevent scorching. Not suitable to freeze or microwave. You can use any thick-fleshed fish for this recipe. Rigani is greek oregano, available at some delicatessens or spice stores. If it’s unavailable, you can substitute dried oregano.
