  • 6 figs
  • 6 slices prosciutto
  • 125 gram soft blue cheese, chopped
  • 20 gram butter
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon brown sugar

Method

Figs in prosciutto with blue cheese

    Preheat oven to moderate, 180°C (160°C fan-forced).
  • 2
    Cut a cross on top of each fig; gently press at base to open slightly. Wrap a slice of prosciutto around each fig and place a little cheese in centre.

    Melt butter in an ovenproof pan on medium heat. Remove from heat; stir in vinegar and sugar.

    Place figs upright in pan, to fit snugly; bake 15 minutes, until cheese melts and figs soften slightly. Serve immediately.
