Fig and chocolate caramel slice

Succulent figs add interest, depth and flavour to this deliciously easy chocolate caramel slice.

Fig and chocolate caramel slice
  • 125 gram butter
  • 1 cup (220g) firmly packed light brown sugar
  • 1 1/4 cup (135g) coarsely chopped dried figs
  • 1 egg, beaten lightly
  • 3/4 cup (110g) self-raising flour
  • 1/4 cup (25g) cocoa powder

    Preheat oven to 180ºC. Grease 20cm x 30cm rectangular pan and line base and long sides with baking paper, extending paper 5cm over sides.

    Melt butter in a medium saucepan over medium heat; stir in sugar until dissolved. Remove from heat; stand 5 minutes. Stir in figs, then egg and sifted flour and cocoa. Press mixture into pan.

    Bake about 15 minutes. Cool slice in pan before cutting into pieces.
