Fetta and black olive mash
  • 1 kilogram potatoes, peeled, coarsely chopped
  • 1 tablespoon olive oil, and extra, for drizzling
  • 2/3 cup buttermilk, warmed
  • 200 gram feta cheese, finely chopped
  • 1/2 cup black olives, thinly sliced

    Boil, steam or microwave potatoes until tender; drain.

    Mash potato in a large bowl with olive oil until smooth. Stir in buttermilk, feta cheese and black olives. Drizzle with extra olive oil.
