Malt loaf is a type of sweet leavened bread made with malt extract as a primary ingredient. Malt loaf has a chewy texture, and contains sultanas.

  • 4 cup (640g) wholemeal plain flour
  • 1/2 cup (110g) firmly packed light brown sugar
  • 1 1/2 cup (250g) sultanas
  • 1 teaspoon bicarbonate of soda
  • 1 tablespoon hot water
  • 1 1/4 cup (310ml) milk
  • 1 cup (250ml) liquid malt
  • 1/2 cup (125ml) treacle

    Preheat oven to 160°C (140°C fan-forced). Grease 15cm x 25cm (6 inch x 10 inch) loaf pan; line base and sides with baking paper, extending paper 5cm (2 inches) above long sides.

    Sift flour into large heatproof bowl; stir in sugar and sultanas.

    Add soda to the hot water in medium jug; stir in milk.

    Place malt and treacle in medium saucepan; stir over low heat until mixture begins to bubble; stir in milk mixture. Stir foaming milk mixture into flour mixture.

    Spread mixture into pan; bake about 1¾ hours. Stand loaf in pan 5 minutes before turning, top-side up, onto wire rack to cool.
