Egg and chive sandwich
  • 2 hard-boiled eggs, halved
  • 1 tablespoon ricotta cheese
  • 2 tablespoon cottage cheese
  • 2 tablespoon finely chopped fresh chives
  • 4 slice rye bread

    In a medium bow, mash egg, cheeses and chives using potato masher or back of fork until combined. Cover with plastic wrap, refrigerate.

    Sandwich egg mixture between bread slices; cut as desired. Wrap in baking paper or plastic wrap.
