Vanilla cupcakes
1.Preheat oven to 180°C/350°F. Line a 12-hole (⅓ cup/80ml) muffin pan with paper cases.
2.Beat ingredients in a medium bowl with an electric mixer on low speed until ingredients are combined. Increase speed to medium; beat until mixture has changed to a paler colour.
3.Spoon mixture into cases.
4. Bake for 30 minutes or until a skewer inserted into the centre comes out clean.
5.Leave in pan for 5 minutes before transferring to a wire rack to cool. Serve dusted with icing sugar.
