Easy passionfruit meringue kisses
  • 2 egg whites
  • 1/2 cup caster sugar
  • 1 teaspoon strained passionfruit juice
  • 1 teaspoon cornflour
  • 60 gram softened unsalted butter
  • 3/4 cup icing sugar
  • 1 tablespoon passionfruit pulp

    Preheat oven to 120°C. Line 2 oven trays with baking paper.

    In a small bowl, using an electric mixer, beat egg whites and caster sugar for 4-5 minutes until sugar dissolves. Fold in passionfruit juice and cornflour. Spoon into a piping bag fitted with 2cm fluted nozzle. Pipe 4cm stars onto trays 2cm apart. Bake for 1 hour. Cool on trays.

    Meanwhile, to make the filling; in a small bowl, beat butter and icing sugar together in a small bowl until pale and creamy. Stir in passionfruit pulp.

    Sandwich meringues with passionfruit butter. Serve dusted with icing sugar.
