Easy Christmas florentines
- 4 cup cornflakes
- 3/4 cup mixed dried fruit
- 1/2 cup glace cherries
- 1/2 cup roasted flaked almonds
- 1/2 cup roasted unsalted peanuts
- 1/3 cup craisins
- 395 gram can sweetened condensed milk
- 200 gram dark chocolate, melted
- melted white chocolate, edible glitter, to decorate
Method
Easy Christmas florentines
- 1Preheat oven to 180°C. Line 4 oven trays with baking paper.
- 2In a large bowl, combine cornflakes, dried fruit, cherries, almonds, peanuts and craisins. Mix in condensed milk until well combined.
- 3Place 2 tablespoons of mixture onto tray. Using damp fingers, shape into a 5cm round. Repeat with remaining mixture, leaving 3cm between each.
- 4Bake for 12-15 minutes until golden. Allow to cool on trays until almost firm, then transfer to a wire rack to cool completely.
- 5Spread melted chocolate onto underside of each, dragging a fork along the base to create a wavy pattern. Allow to set. Drizzle tops of florentines with melted white chocolate and dust with edible glitter.
Notes
Use a selection of the same quantity of fruit and nuts you prefer.
