Double chocolate tiramisu
  • 2 tablespoon instant coffee powder
  • 1/2 cup just-boiled water
  • 1 1/2 cup kahlua
  • 100 gram white chocolate, melted, slightly cooled
  • 500 gram mascarpone
  • 600 millilitre thickened cream, beaten
  • 500 gram packet sponge fingers
  • 100 gram milk chocolate, grated
  • 250 gram strawberries, hulled, halved

    In a shallow bowl, dissolve coffee in boiling water. Add kahlua; cool.

    In a large bowl, whisk white chocolate and a little mascarpone together until smooth. Gradually whisk in remaining mascarpone. Gently fold three-quarters cream through mascarpone mixture.

    Dip half sponge fingers into coffee mixture; arrange over base of a 10-cup serving dish. Spread with one-third mascarpone mixture then sprinkle one-third chocolate over. Repeat layers, finishing with remaining cream.

    Chill at least 3 hours. Serve sprinkled with remaining chocolate; accompany with strawberries.
