Deep-fried sweet pastries (Thiples)

Thiples (or Diples) are a Greek sweet dessert consisting of pastry that has been fried in hot oil, and a honey drizzle. This recipe uses classic flavours so the dish is true to its origin.

Method

1.Sift flour, sugar and salt into large bowl; stir in combined eggs, olive oil and the water. Turn dough onto floured surface, knead until smooth. Enclose in plastic wrap; refrigerate 30 minutes.
2.Divide dough evenly into four pieces. Roll each piece as thinly as possible into about 15cm x 45cm rectangle. Cut into 5cm x 15cm strips.
3.Shape strips into bows or roll into spirals or twist or cut a slit in the strip of dough and pull through.
4.Heat vegetable oil in large saucepan or wok; deep-fry pastries, in batches, turning often, until browned lightly. Drain on absorbent paper.
5.Transfer pastries to serving plate. Drizzle with honey; sprinkle with combined cinnamon and walnuts.
