Date and oat loaf
- 1 1/4 cup self-raising flour
- 1 teaspoon mixed spice
- 3/4 cup brown sugar
- 3/4 cup chopped pitted dates
- 1/2 cup rolled oats, plus 1 tablespoon extra
- 125 gram butter, melted
- 1/2 cup milk
- 2 eggs
- butter, to serve
Method
Date and oat loaf
- 1Preheat oven to moderate, 180°C. Lightly spray a 10 x 20cm loaf pan with cooking oil and line with baking paper.
- 2Sift together flour and mixed spice into a large bowl. Stir in sugar, dates and oats.
- 3In a jug, whisk together butter, milk and eggs. Lightly mix into flour mixture until well combined.
- 4Spoon mixture into prepared pan. Sprinkle with extra oats. Bake for 50-55 minutes or until a skewer inserted into the centre comes out clean and dry.
- 5Allow to cool in the pan for 5 minutes. Transfer to a wire rack to cool completely. Slice and spread with butter to serve.
