Damper and dips

Served with two simple dips, this homemade damper is a perfect accompaniment ... or make the damper as a stand-alone part of any family meal.

Method

1.Preheat oven to very hot, 220°C. Line an oven tray with baking paper.
2.Sift flour into a large bowl. Add butter and rub in using fingertips. Make a well in the centre. Stir parmesan through. Add combined milk and water all at once. reserving 1 tablespoon. Using a flat butter knife. mix quickly to a soft sticky dough. Turn out onto a floured surface and press into a 20cm round.
3.Transfer to tray. Brush with reserved liquid and sprinkle with salt. Bake 5 minutes. Reduce oven to moderate, 180°C, and bake a further 30-35 minutes, until golden and base sounds hollow when tapped.
4.CHILLI DIP: Place all ingredients in a bowl and mix well. Season to taste.
5.TUNA DIP: Place all ingredients in a bowl and mix well. Season to taste.
6.Serve dips with damper.
