Cucumber and pineapple sambal

Sambal is a hot relish made using fresh fruit and vegetable ingredients, this cucumber and pineapple sambal is spicy and crunchy.

Ingredients

Cucumber and pineapple sambal
  • 3 teaspoon shrimp paste
  • 2 fresh small red thai chillies, chopped finely
  • 1 tablespoon lime juice
  • 1 tablespoon light soy sauce
  • 1 teaspoon sugar
  • 1 (130g) lebanese cucumber, peeled, seeded, chopped coarsely
  • 1 (800g) small pineapple, chopped coarsely
  • 6 green onions, sliced thinly
  • fresh coriander leaves, to garnish

Method

    In a heated small saucepan, cook paste on medium heat for about 1 minute, or until dry and crumbly.

    In a small bowl, combine paste and chilli; grind with mortar and pestle. Stir in juice, sauce and sugar; mix well.
