Method

1.Pat pork rind dry with absorbent paper; rub in combined salt, five-spice and oil. Place on wire rack over large shallow baking dish; cover, refrigerate 1 hour.
2.Preheat oven to 240°C/220°C fan-forced.
3.Roast pork 1 hour or until rind begins to crisp.
4.Reduce oven temperature to 160°C/140°C fan-forced; cook pork further 1½ hours or until tender. Stand, uncovered, 15 minutes.
5.Cut pork into thick slices; serve with combined soy sauce and chilli.
