Scrambled eggs are a classic breakfast dish. In this recipe we mix them lightly with cream and chives for a creamy, flavourful result and serve them on sweet brioche with delicious crispy bacon.

Creamy scrambled eggs on brioche with crispy bacon
- 250 gram cherry tomatoes
- 1 tablespoon olive oil
- 8 slice rindless shortcut bacon (280g)
- 8 eggs
- 1/2 cup (125ml) cream
- 2 tablespoon finely chopped fresh chives
- 30 gram butter
- 4 slice brioche, toasted
Method

- 1Preheat grill.
- 2Toss tomatoes in oil. Cook bacon and tomato under grill until bacon is crisp and tomato skins start to split. Cover to keep warm.
- 3Meanwhile, place eggs, cream and chives in medium bowl; beat lightly with fork.
- 4Heat butter in large non-stick frying pan over medium heat. Add egg mixture, wait a few seconds, then use a wide spatula to gently scrape the set egg mixture along the base of the pan; cook until creamy and just set.
- 5Serve brioche topped with egg, bacon and tomatoes.
