Creamy scrambled eggs on brioche with crispy bacon

Scrambled eggs are a classic breakfast dish. In this recipe we mix them lightly with cream and chives for a creamy, flavourful result and serve them on sweet brioche with delicious crispy bacon.

Ingredients

  • 250 gram cherry tomatoes
  • 1 tablespoon olive oil
  • 8 slice rindless shortcut bacon (280g)
  • 8 eggs
  • 1/2 cup (125ml) cream
  • 2 tablespoon finely chopped fresh chives
  • 30 gram butter
  • 4 slice brioche, toasted

    Preheat grill.

    Toss tomatoes in oil. Cook bacon and tomato under grill until bacon is crisp and tomato skins start to split. Cover to keep warm.

    Meanwhile, place eggs, cream and chives in medium bowl; beat lightly with fork.

    Heat butter in large non-stick frying pan over medium heat. Add egg mixture, wait a few seconds, then use a wide spatula to gently scrape the set egg mixture along the base of the pan; cook until creamy and just set.

    Serve brioche topped with egg, bacon and tomatoes.
