Ingredients

Cranberry & red onion relish
  • 50 gram butter
  • 3 (900g) red onions, thinly sliced
  • 1 kilogram frozen cranberries
  • 2 cup (440g) firmly packed brown sugar
  • 1 cup (250ml) brown vinegar
  • 1/2 cup (125ml) balsamic vinegar
  • 1 teaspoon coarse cooking salt
  • 4 whole cloves
  • 1/2 teaspoon dried chilli flakes

Method

Cranberry & red onion relish

    Melt butter in large saucepan. Stir onion over medium heat until soft.

    Add remaining ingredients and stir over heat until sugar dissolves. Bring to the boil; reduce heat. Simmer, uncovered, stirring occasionally, for about 1 hour or until thick.

    Pour relish into hot sterilised jars and seal immediately.
