Method

1.Place couscous in a bowl and cover with boiling water. Set aside 10 minutes.
2.Spray a frying pan with cooking oil. Cook onion and garlic on medium heat 4 minutes, until golden. Stir through cumin and cook 1 minute.
3.Add to couscous with combined Dressing ingredients. Season and fluff with a fork. Fold cranberries, orange, herbs and nuts through couscous to serve.
