Cranberry and honey muesli bars

Packed with fruit and seeds, these gluten-free cranberry and honey muesli bars bars are perfect for a morning or afternoon pick-me-up. They're also nut-free, so feel free to add them to the kids' lunch boxes.

Cranberry and honey muesli bars
  • 125 gram butter, chopped coarsely
  • 1/3 cup (75g) firmly packed brown sugar
  • 2 tablespoon honey
  • 1 1/2 cup (165g) rolled rice
  • 1/2 cup (65g) gluten-free self-raising flour
  • 1/3 cup (45g) dried cranberries, chopped finely
  • 1/3 cup (50g) finely chopped seeded dried dates
  • 1/3 cup (55g) sultanas, chopped finely
  • 1/4 cup (50g) pepitas
  • 2 tablespoon sesame seeds

    Preheat oven to 160°C/140°C fan-forced. Grease 19cm x 29cm slice pan; line base with baking paper, extending paper 5cm over long sides.

    Combine butter, sugar and honey in small saucepan; stir over low heat until smooth.

    Combine remaining ingredients in large bowl; stir in butter mixture. Press mixture firmly into pan; bake, in oven, about 35 minutes or until golden brown. Cool in pan before cutting into bars.
