1.Combine couscous, lemon juice and boiling water in a medium heatproof bowl, stand for 5 minutes or until liquid is absorbed, fluffing with a fork occasionally. Cool.
2.Boil, steam or microwave peas and beans, separately, until just tender, drain. Rinse each under cold water, drain. Combine olive oil and wholegrain mustard in a large bowl, add couscous, peas, beans and chives, toss gently to combine.
