1.Cool cooked potatoes and grate coarsely into a medium-sized bowl. Add corned beef and green onion and season with pepper. Combine well. Using 1/3-cup measures, form mixture into patties. Set aside.
2.Heat 1 tablespoon of oil in a large saucepan on high. Add cabbage, tossing to coat well. Mix in stock and a good grinding of pepper. Cook for 5 minutes, covered, until just tender.
3.Meanwhile, heat remaining oil in a large frying pan on medium. Cook patties for 3-4 minutes each side, until golden. Serve patties with braised cabbage.
