Cooked English breakfast

Nothing like one of these after a big night!

There's something so special about a classic English fry-up complete with eggs, bacon, mushrooms, sausage and roasted tomatoes.

Ingredients

  • 50 gram (1½ ounces) butter
  • 300 gram (9½ ounces) button mushrooms, halved
  • 1 tablespoon fresh thyme leaves
  • 8 chipolata sausages (240g)
  • 4 rindless bacon slices (260g)
  • 2 medium tomatoes (300g), halved
  • 1 tablespoon vegetable oil
  • 8 eggs

Method

    Heat butter in medium saucepan; cook mushrooms, stirring, about 5 minutes or until tender. Sprinkle with thyme, season to taste; cover to keep warm.

    Cook sausages and bacon in heated oiled large frying pan. Remove from pan; cover to keep warm. Drain fat from pan.

    Preheat grill (broiler).

    Place tomato, cut-side up, on oven tray; grill tomato until browned lightly.

    Meanwhile, heat oil in same large frying pan; cook eggs until done to your liking.

    Serve mushrooms, sausages, bacon, tomato and eggs with toast, if you like.

Notes

Chances are you've had an early morning. You might have even been out in the paddocks already. Come inside to the warmth of the kitchen and enjoy a wholesome country breakfast, in readiness for a big day ahead.
