Coffee nut biscuits
Pecans and coffee flavours combine to create a delicious union in this classic sweet treat.

Ingredients
- 125 gram butter
- ½ cup (100g) firmly packed brown sugar
- 1 egg
- 2 tablespoons dry instant coffee
- 1 tablespoon hot water
- 1¼ cups (185g) plain flour
- ½ cup (75g) self-raising flour
- 1 cup (100g) pecans, approximately
- 1 tablespoon icing sugar mixture
- 1 teaspoon dry instant coffee, extra
- 250 grams dark chocolate, melted
- 2 teaspoons vegetable oil
Method
- 1Beat butter, brown sugar and egg in small bowl with electric mixer until smooth.
- 2Stir in combined cooled coffee and water, then sifted flours in 2 batches. Mix to a soft dough, knead gently on lightly floured surface until smooth.
- 3Roll dough between sheets of baking paper until 5mm thick. Cut into 5cm rounds, place about 4cm apart on greased oven trays, top with nuts.
- 4Bake in moderate oven about 12 minutes or until lightly browned. Cool on wire racks.
- 5Dust biscuits with combined sifted icing sugar and extra coffee. Dip half of each biscuit into combined chocolate and oil. Leave to set on wire racks.
