Coffee and raisin sundaes

Five ingredients, five minutes and completely dairy-free, this delicious coffee-soaked raisin sundae is the perfect guilt-free way to celebrate summer. This recipe serves two so it's great for sharing, too!

Ingredients

Coffee and raisin sundaes
  • 1/2 cup raisins
  • 1 tablespoon coffee-flavoured liqueur
  • 250 gram soy vanilla ice-cream, slightly softened
  • 2 dairy-free waffle baskets
  • 1/2 cup drained canned sliced peaches

Method

    Combine raisins and liqueur in a bowl; stand for 15 minutes to soak.

    Place ice-cream in a bowl. Add half of the raisin mixture; stir to combine. Freeze for 15 minutes or until firm.

    Place scoops of ice-cream into each waffle basket. Serve topped with peach slices and remaining raisin mixture.
