Clear vegetable soup
  • 8 cup (2l) vegetable stock
  • 4 (1kg) trimmed corn cobs
  • 2 cup (200g) coarsely chopped cauliflower
  • 2 (140g) small carrots, cut into 1cm pieces
  • 120 gram snow peas, trimmed, thinly sliced
  • 4 green onions, thinly sliced

    Bring stock to a boil in large saucepan.

    Cut kernels from corn cob, add to pan with cauliflower and carrot; return to a boil. Reduce heat. Simmer with lid on for about 10 minutes or until cauliflower is just tender.

    Stir in snow peas and onion; simmer, uncovered, 2 minutes.
