Classic French dressing

This classic dressing goes with most delicate and robust leafed salads, or an heirloom tomato and basil salad. Add a little garlic if you like.

  • ⅓ cup white vinegar
  • 2 teaspoon dijon mustard
  • ½ teaspoon caster (superfine) sugar
  • ⅔ cup olive oil

    Combine vinegar, mustard and sugar in a small bowl.

    Gradually olive oil in a thin, steady stream, whisking continuously until thickened.
