Christmas pudding slice

Experience the beloved flavours of a classic Christmas pudding in this easy-to-make slice. It's the perfect last-minute addition to your festive feast and is great for using up leftover dried fruits.

Ingredients

  • 1 cup raisins
  • 1 cup coarsely chopped dried dates
  • 1/2 cup boiling water
  • 1 teaspoon bicarbonate of soda
  • 90 gram butter, softened
  • 1 cup brown sugar
  • 1 egg
  • 1 cup self-raising flour
  • 1/2 cup plain flour
  • 1/2 cup brandy or dry sherry
  • 1/3 cup chopped pistachios
  • 50 gram violet crumble, chopped
Topping
  • 100 gram milk chocolate, melted
  • 50 gram violet crumble, chopped
  • 1/4 cup chopped pistachios
  • 1/3 cup chopped craisins
  • 1/3 cup quartered glace cherries
  • 1 teaspoon gold cachous
  • 1 teaspoon silver cachous

Method

    Preheat oven to 180°C. Lightly grease and line a 20 x 30cm slice pan.

    In a heatproof bowl, combine raisins, dates, water and soda. Set aside for 10 minutes.

    In a bowl, using an electric mixer, beat butter and sugar together until pale and creamy. Add egg, beating well. Fold in sifted combined flours, date mixture, brandy, nuts and violet crumble.

    Spoon mixture evenly into pan. Bake for 25-30 minutes until cooked when tested.

    When ready to serve, drizzle chocolate over pudding and sprinkle with remaining topping ingredients and cachous.

Notes

Use raspberries, blueberries or sliced strawberries to garnish.
