Chocolate s'mores microwave mug cake

Create a decadent dark chocolate pudding in no time at all with this easy microwavable mug cake recipe. Add some melted marshmallows and crushed butternup biscuits on top to channel the indulgent flavours of American s'mores desserts.

Chocolate s'mores microwave mug cake
  • 2/3 cup self-raising flour
  • 1/3 cup plain flour
  • 1/3 cup cocoa
  • 1 cup milk
  • 2/3 cup caster sugar
  • 125 gram unsalted butter, melted, cooled
  • 1 teaspoon vanilla essence
  • 100 gram dark chocolate, roughly chopped
  • 1/2 cup frozen raspberries, lightly crushed
  • 4 tablespoon mini mashmallows
  • extra dark chocolate, chopped, to serve
  • butternut snap biscuits, broken, to serve

    Sift self-raising flour, plain flour and cocoa together into a bowl. Whisk in milk, sugar, melted butter and vanilla, until combined.

    Fold chocolate and raspberries through. Divide mixture evenly between four 1 ½ cup microwave-safe jars.

    Arrange 2 jars in microwave. Microwave on HIGH (100%) for 2 ½ minutes. Top each with 1 tablespoon of mini marshmallows. Microwave 15 seconds more. Set aside 5 minutes (mallows will begin to soften on standing).

    Repeat with remaining jars and mallows. Serve topped with extra chopped dark chocolate and broken butternut snap biscuits.
