Chocolate, pear and hazelnut self-saucing pudding
  • 100 gram dark eating (semi- sweet) chocolate, chopped coarsely
  • 50 gram butter
  • 2/3 cup (160ml) milk
  • 2/3 cup (100g) roasted hazelnuts,chopped coarsely
  • 1/4 cup (25g) ground hazelnuts
  • 1 cup (220g) firmly packed brown sugar
  • 1 cup (150g) self-raising flour
  • 1 egg, beaten lightly
  • 2 medium_piece (460g) pears
  • 1/2 cup (50g) cocoa powder
  • 1 cup (220g) firmly packed light brown sugar
  • 1 3/4 cup (430ml) water
  • 100 gram butter, chopped

    Preheat oven to 180°C (160°C fan forced). Grease shallow 3-litre (12-cup) baking dish.

    Stir chocolate, butter and milk in small saucepan over low heat until smooth. Transfer to large bowl. Stir in nuts, ground hazelnuts and sugar, then sifted flour and egg. Spoon mixture into dish.

    Peel and core pears, slice thinly. Place pear slices, slightly overlapping, on top of chocolate mixture in dish.

    Make fudge sauce. Sift cocoa and sugar into small saucepan, stir in water and butter. Stir over medium heat until smooth, do not boil. Pour over pears.

    Bake pudding about 1 hour. Stand pudding 10 minutes before serving.
