1.Preheat oven to 200°C (180°C fan-forced). Grease 12 x ½-cup (125ml) rectangular or oval friand pans, stand on oven tray.
2.Place egg whites in medium bowl, beat with a fork. Stir in butter, hazelnut meal and sifted icing sugar and flour, stir in chocolate. Spoon mixture into pan holes, sprinkle with nuts.
3.Bake friands about 20 minutes. Stand friands in pans 5 minutes, turn, top-side up, onto wire rack to cool.
Loaf and oval-shaped pans are available in racks, or as individual pans. It’s the individual pans that need to be stood and baked on an oven tray, simply for easy handling.
