Method
1.Preheat oven to 180°C (160°C fan-forced). Grease 20cm x 30cm lamington pan, line base with baking paper, extending paper 5cm over two long sides.
2.Peel apples, grate coarsely.
3.Sift dry ingredients into large bowl, stir in apple, linseed meal, eggs, oil and extract. Pour mixture into pan.
4.Bake cake about 45 minutes. Turn, top-side up, onto wire rack to cool.
5.Meanwhile, make chocolate icing.
6.Spread cold cake with chocolate icing. juice to make a thick icing.
This recipe is gluten-free, wheat-free, yeast-free and dairy-free. Use a hot dry knife to cut the cake. storage
