Chocolate apple cake
- 4 medium_piece (600g) apples
- 3/4 cup (110g) potato flour
- 3/4 cup (120g) brown rice flour
- 1/4 cup (25g) cocoa powder
- 1 cup (220g) caster sugar
- 1/4 cup (30g) linseed meal
- 4 eggs, beaten lightly
- 1 cup (250ml) vegetable oil
- 1 teaspoon vanilla extract
- 1 teaspoon bicarbonate of soda
- 1 cup (160g) pure icing sugar
- 1 tablespoon cocoa powder
- 2 tablespoon apple juice, approximately
Method
Chocolate apple cake
- 1Preheat oven to 180°C (160°C fan-forced). Grease 20cm x 30cm lamington pan, line base with baking paper, extending paper 5cm over two long sides.
- 2Peel apples, grate coarsely.
- 3Sift dry ingredients into large bowl, stir in apple, linseed meal, eggs, oil and extract. Pour mixture into pan.
- 4Bake cake about 45 minutes. Turn, top-side up, onto wire rack to cool.
- 5Meanwhile, make chocolate icing.
- 6Spread cold cake with chocolate icing. juice to make a thick icing.
Notes
This recipe is gluten-free, wheat-free, yeast-free and dairy-free. Use a hot dry knife to cut the cake. storage
