Chocolate and zucchini cake
Chocolate and zucchini are an unlikely team, but this combination really does work a treat. A clever way to get the kids to eat vegetables without them knowing they're eating vegetables!

Chocolate and zucchini cake
- 1/2 cup olive oil
- 1 cup brown sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon instant coffee
- 2 cup plain flour
- 1/2 cup cocoa powder
- 1 teaspoon bicarbonate of soda
- 1/2 teaspoon baking powder
- 2 cup zucchini, grated
- 1 cup dark chocolate chips
- mixed berries, icing sugar, cream, to serve
Method
Chocolate and zucchini cake
- 1Preheat oven to moderate, 180°C. Lightly grease and line a 25cm round springform pan.
- 2In a medium bowl, using an electric mixer, beat oil, sugar and eggs together until pale. Beat in vanilla and coffee.
- 3Sift combined flour, cocoa, soda and baking powder together into a large bowl. Stir in zucchini and choc chips. Lightly fold into oil mixture until combined.
- 4Spoon into pan, smoothing surface. Bake for 50 minutes, until cooked when tested.
- 5Cool in pan for 5 minutes, then transfer to a wire rack to cool completely. Top with berries, dust with icing sugar and accompany with cream.
Notes
Store in an airtight container.
