Chocolate and raisin Anzac slices
This tasty fruity and chocolatey slice takes all the flavours of a traditional Anzac biscuit and turns them into a sweet slice, perfect for work and school snacks.

Chocolate and raisin anzac slices
- 1 cup rolled oats
- 1 cup plain flour, sifted
- 1 cup caster sugar
- 1 cup desiccated coconut
- 125 gram butter, chopped
- 1 tablespoon golden syrup
- 2 tablespoon boiling water
- 1 teaspoon bicarbonate of soda
- 1/2 cup chopped walnuts
- 1/3 cup chopped raisins
- 200 gram dark chocolate, melted
Method

- 1Preheat oven to moderately low, 160°C. Lightly grease an 18 x 28cm slice pan. Line base and two sides with baking paper, extending 2cm above pan edge.
- 2In a medium bowl, combine oats, flour, sugar and coconut.
- 3In a small pan, combine butter and golden syrup. Stir over low heat for 2-3 minutes until melted.
- 4In a small jug, combine water and bicarbonate of soda. Stir into butter mixture. Pour into dry ingredients. Mix in walnuts and raisins.
- 5Press mixture very firmly into prepared pan using a fork. Bake for 25-30 minutes until golden. Cool in pan.
- 6Spread chocolate over the cooled mixture and chill until firm. Using a hot knife, cut slab into squares. Store in an airtight container.
Notes
Melt chocolate in the microwave - use the High (100%) setting and cook for 30 seconds at a time, stirring after each burst.
