Choc-cherry and hazelnut biscotti trifle

Method

1.In a small bowl, combine cherries and marsala.
2.Reserve eight biscotti; coarsely chop remaining biscotti.
3.In a medium bowl, whisk chocolate mousse until smooth.
4.Spoon half the cherry mixture into four 2-cup (500ml) glasses; top with half the chopped biscotti and half the mousse. Repeat layering.
5.Serve trifles with reserved biscotti.

You can improvise with the ingredients in this trifle. Try sponge finger biscuits instead of biscotti, raspberries in place of cherries and a nut-flavoured liqueur as a substitute for the marsala. Biscotti is available at selected delicatessens, specialty food stores and online.
