Refrigerate your rice overnight before cooking, use the biggest pan you have and pre-heat it well. That will ensure this Chinese fried rice is cooked to perfection.
1.Heat 2 teaspoons oil in large wok on high. Pour in egg and cook as an omelette. Remove, roll up and slice. Heat remaining oil in wok. Stir-fry ham, ginger and garlic for 1 minute. Add vegetables. Stir-fry for 1-2 minutes.
2.Toss rice, prawns, soy and wine through Stir-fry for 2-3 minutes, until hot. Serve topped with omelette and extra onion.
