Chilli barbecue ribs
  • 1 1/4 cup (310ml) cider vinegar
  • 1 tablespoon vegetable oil
  • 1 tablespoon molasses
  • 2 teaspoon sea salt
  • 1 teaspoon chilli flakes
  • 1/4 teaspoon cayenne pepper
  • 2/3 cup (160ml) water
  • 1.5 kilogram slab barbecue beef ribs

    Make marinade by whisking vinegar, oil, molasses, salt, chilli, cayenne and the water in a large jug until combined. Reserve ½ cup marinade. Combine remaining marinade with ribs in a large shallow dish. Cover, refrigerate 3 hours or overnight.

    Heat a covered barbecue. Place ribs in a disposable baking dish. Cook, using indirect heat, for 35 minutes. Brush with some of the reserved marinade, cook a further 15 minutes, brushing ribs with remaining marinade every 5 minutes.

    Remove ribs from barbecue, cover, stand 5 minutes. Cut into individual ribs to serve.
