Chilli and garlic spaghettini with breadcrumbs

For such an incredibly simple dish, this chilli and garlic spaghettini is just loaded with flavour, and crunch thanks to the toasted breadcrumbs. A great pick-me-up dish when you're short on time.

Ingredients

Chilli and garlic spaghettini with breadcrumbs
  • 375 gram (12 ounces) spaghettini pasta
  • 1/3 cup (80ml) olive oil
  • 50 gram (1½ ounces) butter
  • 4 clove garlic, crushed
  • 4 fresh small red thai (serrano) chillies, chopped finely
  • 2 cup (140g) fresh breadcrumbs
  • 1/2 cup coarsely chopped fresh flat-leaf parsley
  • 2 teaspoon finely grated lemon rind

    Cook pasta in large saucepan of boiling water until tender; drain.

    Meanwhile, heat half of the oil in large frying pan with butter; cook garlic, chilli and breadcrumbs, stirring, until breadcrumbs are browned lightly.

    Combine pasta and breadcrumb mixture in large bowl with parsley, rind and remaining oil.
