Chilli and garlic spaghettini with breadcrumbs
For such an incredibly simple dish, this chilli and garlic spaghettini is just loaded with flavour, and crunch thanks to the toasted breadcrumbs. A great pick-me-up dish when you're short on time.

Chilli and garlic spaghettini with breadcrumbs
- 375 gram (12 ounces) spaghettini pasta
- 1/3 cup (80ml) olive oil
- 50 gram (1½ ounces) butter
- 4 clove garlic, crushed
- 4 fresh small red thai (serrano) chillies, chopped finely
- 2 cup (140g) fresh breadcrumbs
- 1/2 cup coarsely chopped fresh flat-leaf parsley
- 2 teaspoon finely grated lemon rind
Method

- 1Cook pasta in large saucepan of boiling water until tender; drain.
- 2Meanwhile, heat half of the oil in large frying pan with butter; cook garlic, chilli and breadcrumbs, stirring, until breadcrumbs are browned lightly.
- 3Combine pasta and breadcrumb mixture in large bowl with parsley, rind and remaining oil.
