Chilled spiced carrot and lime soup

Who says soup is strictly a cold weather meal? This simple, spicy carrot and lime soup is served chilled, making it a perfect meal for a hot summer's day.

Ingredients

Chilled spiced carrot and lime soup
  • 500 gram carrots, peeled, cut into 1cm pieces
  • 1 medium onion, chopped
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • pinch of ground chilli
  • 1 tablespoon caster sugar
  • 2 tablespoon lime juice
  • coriander leaves and pappadums, to serve

Method

    Combine carrot, onion, 1 teaspoon salt, spices, chilli and sugar, 1 tablespoon lime juice and 3 cups water in a large saucepan. Bring to boil, stirring occasionally. Reduce heat, cover and simmer for 30 minutes or until carrots are tender.

    With a blender, puree soup. Season to taste and cool to room temperature. Stir in another 2 cups cold water and chill until very cold.

    Stir in remaining lime juice and check seasoning. Top with coriander and serve with pappadums.
