Chicken, tomato and feta rissoles

Take your rissoles in a tasty new direction with chicken mince, and the delicious flavour of crumbly feta and acidic tomatoes.

Chicken, tomato and feta rissoles
  • 750 gram chicken mince
  • 1/3 cup drained semi-dried tomatoes
  • 1 egg
  • 1/2 cup stale breadcrumbs
  • 100 gram feta cheese

    Combine chicken mince, semi-dried tomatoes, egg, breadcrumbs and cheese in large bowl; shape into twelve rissoles.

    Cook rissoles in heated oiled large frying pan, in batches, until cooked through. Drain on absorbent paper.

    Serve rissoles with a baby spinach and feta salad, if you like.
