1.Bring stock to a boil in large saucepan, add chicken, simmer, uncovered, about 5 minutes or until chicken is just cooked through.
2.Add soy sauce and noodles, simmer, uncovered, about 5 minutes or until noodles are just tender. Add choy sum, simmer, uncovered, until choy sum is just tender.
This recipe is best made just before serving.
